Summer Corn Salad pinit

Next big hit at your next cookout! GOODNESS! Nothing says summer like FRESH SWEET CORN. Believe it or not corn is a great source of your C and B vitamins, as well as good source of potassium.

Fresh sweet corn, bacon, cheese, scallions, red onion, lime, fresh dill and jalapeños mixed with a homemade tangy ranch dressing! You can’t get just one helping, you’ll be back for more, trust me.

To make the salad: (serves 2-3)
2 cups sweet corn
6 slices bacon
2 tbsp chopped green onion
2 tbsp chopped red onion
1/2 jalapeno, finely chopped
1/2 cup cheddar cheese, shredded
1/2 of lime, juiced
1/2 tsp garlic powder
salt/pepper to taste

To make the dressing:
3/4 cup mayo or greek yogurt
2 tbsp sour cream
4 tbsp whole milk
2 tbsp buttermilk
1/4 tsp garlic powder
1 tbsp lemon juice
1/2 tsp fresh dill
salt/pepper to taste

In medium bowl, combine mayo, sour cream, milk, buttermilk, onion powder, garlic, lemon juice, dill and salt and pepper, whisk for 1-2 minutes and set aside.

In large serving bowl, add corn, cooked bacon, cheese, onion, scallions, jalapeño, lime juice, garlic powder and 1/2 of the dressing. Stir and mix well together, then season with salt and pepper to taste. Add additional dressing if needed.
