Green Onion Dip & Veggie Platter

I love a good dip with my veggies. I love onions, so why not come up with a good tasty healthy dip to go with it? Here’s a simple recipe that will be a hit in your kitchen for sure! With Easter dinner approaching, notch up the basic grocery store veggie platter and add a good dip for the family. If you’re anything like me, you love to snack, so here’s an easy recipe to get you going.

Veggie Platter
1/2 medium cucumber
2-3 stalks celery
1/2 green pepper
1/2 bunch asparagus (8-10 stalks)

Of course you can add however many or whatever veggies you want to the mix, but it’s Spring, and spring means GREEN. LOL. So that’s where I’m going with this dish, OK? This recipe will serve about 2-4 people, so please feel free to add on. So for the asparagus, I boiled about 1 cup of water in a medium pan, and then added my asparagus once the water was a rolling boil. Then take out and place in a medium bowl filled with ice and water. Give your asparagus an ice bath until the asparagus has cooled off. I sprinkled mine with a nice citrus garlic salt from Trader Joe’s, but lemon pepper would work just as nice.

I’ve got a rule of thumb on veggies. Always eat ONE cooked veggie with a mix of raw veggies. The cooked veggie allows for better digestion and absorption of nutrients, and the raw veggies serve like a broom to sweep everything out of the body.

Green Onion Dip
1 cup chopped green onions
8 oz sour cream or greek yogurt
4 oz cream cheese
1 tsp onion salt (love mine from Trader Joes!)
1 tsp garlic powder
1 tsp dill
salt and pepper to taste

In a medium pan, add oil and green onions. Saute and stir until onions are soft. Then add about 2 tbsp. of water and stir until water is gone.

In medium bowl, add sour cream, cream cheese, and onion mixture. Stir real good and then add your onion salt (truly, I LOVE the onion salt from Trader Joes, such good flavor), garlic powder, dill, apple cider vinegar, and salt and pepper to taste.

Cover and put in the fridge for 2 hours to chill. It’s delicious.
