A healthier take on my mom’s all time favorite stew growing up. – olive oil, garlic, minced, sweet onion, diced, frozen corn, frozen lima beans, Lima beans, russet potatoes, cubed, Diced tomatoes, chicken broth, worcestershire, liquid smoke, raw honey, sea salt, black pepper, chicken breast, shredded, hot sauce, In medium pot/dutch oven, add oil and sautée onion and garlic for a minute. ; Add broth, vegetables, worcestershire, honey, sea salt and pepper.; In food processor, add canned Lima beans and 1 cup of stock from stew. Once it’s smooth, add to stew.; In insta pot, add chicken breast, liquid smoke, and 1 cup chicken broth. Cook for 13 min, then shred and add to stew. ; Cook stew for 35-40 minutes.
