Super Asian Salad

1 6 oz garlic marinated chicken breast (see below)
4-5 cups mixed lettuces (spring mix, romaine, mixed greens) NO ICEBERG!
1/2 cup shredded carrots
1/2 cup diced red bell peppers
1 tbsp sliced almonds

Honey Sesame Dressing
1/4 cup rice vinegar
1/4 cup coconut aminos
1/4 cup sesame oil
1/2 tsp garlic powder
1/2 tsp ginger
1 tbsp raw honey
Dash crushed red pepper

Garlic Chicken Marinade
2 medium chicken breast
1 tbsp avocado oil
1 tsp sea salt
1 tsp garlic powder
1 tsp oregano
1/2 tsp black pepper
1/2 tsp smoked paprika
2-3 cloves garlic, minced
1/4 tsp crushed red pepper

I can honestly tell you that this salad is everything. So flavorful. The almonds gives this the crunch you need. Let’s not even talk about this yummy dressing. All of it healthy, gluten free, and good enough to repeat this recipe over again.

First prepare your chicken. In bowl with lid or ziplock bag add all ingredients and place in refrigerator for 2 hours or up to 24 hours.
Grill, saute, or bake, it doesn’t matter. It’s delicious either way.

In large bowl, add washed greens and veggies. Top with almonds and no more than 2 tbsp of dressing. Enjoy and make sure to save your leftovers for the next day’s lunch!
